It’s strawberry time again! Yeah – I looooove recipes with strawberries, because those little red fruits are such versatile ingredients: One can use them for sweet desserts, eat them pure or combine them with hearty dishes. With some of the first strawberries this year, I prepared a strawberry-rocket salad with halloumi and avocado. A gorgeous combination: Sweet, fruity, tartly and hearty. Yummi!
Recipe: Serves 2.
Ingredients: 500 g rocket (washed & drained), 250 g strawberries (cut into pieces), 1 avocado (cubed), 1 onion (diced), 200ml yoghurt, 1 TblSp lemon juice, 2 TSps oil, salt, pepper, 2 pieces halloumi
Preparation: Mix the rocket, strawberries, avocado pieces and the onions. Prepare a yoghurt dressing: Mix the yoghurt, the lemon juice and 1TSp oil with each other and add a dash of salt and pepper. Roast the halloumi in a pan with 1TSp oil. Serve the Salad with the halloumi and the dressing.
