This is the easiest way I know to enjoy fresh beets. I enjoy them solo or as side with a piece of fish.
Ingredients: Beets, olive oil, salt, pepper.
Preparation: Wash the beets and dry them. Cut them into quarters. Line a baking tray with tinfoil. Put the beets onto the tray, drizzle with oil. Make sure that all beets are covered with oil. Season with salt and pepper. Cover with tinfoil (press it down around the single beets). Put into the oven and roast for app. 60 minutes at 220 °C.
