Time for something healthy… there will be lots of chocolate, cake and eggs during the Easter weekend! It took me ages to recognize that beetroot can also be eaten raw. Now, I eat it even more often than before this epiphany – especially with this delicious apple beetroot salad!
Recipe: Serves 2.
Ingredients: 2 raw beetroots, 1 apple, 2 TblSps white wine vinegar, 2 TblSps olive oil, salt, pepper.
Preparation: Peel the apple and the beetroots. Slice very thinly (I use a rasp). Mix in a bowl, season with oil, vinegar, salt and pepper.
