Just in case, last week’s post was not seducing enough and you are not already completely bored with the tasty dough disks… Here they come again – PANCAKES! Like promised, this time I will present you my own fail-safe recipe. I found it years ago in a magazine and I believe that I have done it at least 100 times since then. I like them most with maple syrup or apple sauce, but they are also excellent with lemon curd or honey butter (simply melt together 100 g butter and 4 tbsp. honey). Oh and by the way: They are quite addictive. – Thus, don’t tell me later, I didn’t warn you 😉

Recipe:
Serves 4.
Ingredients: 200g plain flour, 2 tsp. baking powder, 1 tbsp. caster sugar, 2 large eggs, 40g melted butter, 150 ml milk, extra butter for the pan
Preparation:
Combine flour, baking powder and caster sugar in a big bowl. Make a well in the center and pour in 2 large eggs, the melted butter and 150 ml milk. Whisk until smooth (the batter should have the thickness of double cream).
Heat a non-stick frying pan over a medium heat and add a knob of butter. When melted, add a spoon of batter. Wait until the top begins to bubble, then turn and cook until both sides are golden brown.
