Mashed Carrots & Potatoes with Sautéed Onions!

What to do with lots of potatoes? Do you know the problem: You need two potatoes and then you only find a big sack with at least 2 kg of them? My answer: Mashed potatoes. Even better: Mashed carrot potatoes with sautéed onions!

Recipe: Serves 2-3.

Ingredients:

500 g potatoes (peeled), 5 large carrots (peeled and cut into chunks), 2 large onions (peeled and cut into thin rings), app. 60 g soft butter, app. 250 ml warm milk, salt.

Preparation:

Cook the potatoes together with the carrot chunks for at least 20 minutes in salted water. Sauté the onion rings slowly in app. 30 g butter until they are translucent. Drain the water from the potatoes and carrots. Then mash them – thereby adding slowly the warm milk and app. 30 g butter. Season with salt. Serve the mashed carrot potatoes with sautéed onions and a fresh seasonal salad :).
