Last Sunday on the farmers market I saw a bunch of beetroots and just couldn’t walk away without them. I only wondered later, what to prepare with five beetroots. I finally decided for a traditionally beetroot salad and I can’t tell you how delicious it was. I ate the whole bowl … if my face looks somehow red today, you now have the explanation for it 🙂
Recipe: Serves 2-3.
Ingredients: 4-5 small beetroots, salt, aceto balsamico (app. 50 ml), one diced onion, sugar, pepper, 1 TSp grated horseradish.
Preparation: Cook the beet roots in salted water for app. 70 min, let them cool down a bit and peel them. Cut into thin slices. Mix the onions and the beets, add aceto balsamico and season with salt, pepper, sugar and the horseradish.
Best served while still luke-warm 🙂
