Chocolate Cheese Cake … with Beetroot!

I recently saw this recipe and wondered if beetroot in a cake makes sense. Guess what? It does!

Recipe: Serves 12.

Ingredients for the chocolate dough: 300 g rootbeet (vaccum pack), 150 g butter, 100 g dark chocolate, 3 eggs, 150 g sugar, 150 g flour, 1 TSp baking powder, 2 TblSps cocoa.

Ingredients for the cheese cake topping: 2 eggs, 100 g sugar, 50 ml orange juice, 1-2 TblSps corn starch, 400 g cream cheese (heavy cream), powdered sugar to dust the cake.

Preparation:

Preheat the oven (180°C). Cube the beetroot and purée. Melt the butter together with the chocolate and let the mass cool down a bit. Beat the 3 eggs until fluffy. Add the flour, baking powder and cocoa to the eggs. Add chocolate-butter and beetroot mash. Save 5 TblSps of the dough and put the rest of it into a spring form (ø 28cm).

Separate the other 2 eggs. Mix the egg yolks with 50 g sugar and beat until a fluffy consistency is reached. Add orange juice, corn starch and cream cheese. Whisk egg white until stiff, add 50 g sugar and mix with the cream cheese mass.

Give cheese mixture on top of the chocolate dough. Add the saved 5 TblSps of chocolate dough and marble with a fork. Bake for 60 min. Dust the cake with the powdered sugar.
