Piparkakut (Gingerbread)!

My (half-Finnish) pal Annika invited us over last weekend to bake some Finnish cookies: Piparkakut (gingerbread). They taste spicy and sweet and are absolutely my cup of tea/cookies 😉 Thus, I just had to share this recipe with you:

Recipe:

Ingredients:
I: 250 g butter, 100 g sugar, app. 225 g sugar beet molasses, 2 TSps cinnamon, 2 TSps grounded ginger, 2 TSps grounded cloves, 3-4 TSps orange peel
II: 2 eggs
III: 500 g flour, 3 TSps baking soda

Preparation:
I: Mix ingredients (butter, sugar, molasses, cinnamon, ginger, cloves, orange peel) and boil them up until the mixture is smooth. Cool down.
II: Add eggs. Mix.
III: Add flour and baking soda, mix.

Store the dough over night in the fridge. Then roll it out, cut out the cookies and bake for 7 – 10 minutes at 225 °C.
