Sometimes I have a strong craving for fish. Salmon and fennel are just the perfect pair to combine. So, that’s why this recipe is an absolutely must-try :).
Recipe: Serves 2.
Ingredients: 200 g salmon, 100 ml heavy cream, 1 small courgette (cut into thin slices), 1 small fennel (cut into thin slices), 1 red bell pepper (cut into thin slices), 1 onion (cut into thin slices), 2 TblSps olive oil, salt, 1 TSp sugar, pepper, spices (coriander, rosemary, caraway, thyme, turmeric, paprika, marjoram, nutmeg).
Preparation: Put the sliced vegetables into an oven dish. Season the heavy cream with salt, pepper, sugar, coriander, paprika, marjoram, nutmeg and a dash of turmeric. Add to the vegetables. Mix 2 TblSps oil with salt, pepper, coriander, caraway, thyme and turmeric. Brush the fish with oil-spices mixture. and put it on top of the vegetables. Bake at 200 °C for app. 30 minutes.
