Sometimes everything has to happen fast and easy, but there still has to be plum pie. For exactly these occasions I recently discovered this easy-peasy plum pie recipe… with lots of delicious crumbles!
Recipe: Serves 6-8.
Ingredients: App. 1 kg plums (washed, halved and pitted), 150 g butter, 150 g sugar, 200 g flour, 3 egg yolks, 1 package vanilla sugar.
Preparation: In a small pot, melt the butter together with the sugar. Mix egg yolk with the flour, vanilla sugar and the melted sugar-butter until you have crumbles (“streusel”). Use a greased springform tin and press 3/4 of the crumbles at the bottom to create the cake base. Distribute the washed and halved plums onto the dough – with the dome looking up. Top with the rest of the crumbles and bake for app. 50 minutes at 180°C.
